The legacy of Dr. Clinton L. Rappole (Hon. ‘73) at the University of Houston
Conrad N. Hilton College of Global Hospitality Leadership is one defined
by vision, service, and an unwavering commitment to others. For more
than three decades, Dr. Rappole helped shape the College into what it is
today, leaving an enduring impact on its programs, traditions, and, most
importantly, its people.

Dr. Rappole joined the College in August 1972, bringing with him a strong
academic foundation and a passion for advancing hospitality education. A
highly regarded food scientist, he earned both his master’s degree and Ph.D.
from Cornell University, where he also served on the faculty prior to coming
to Houston. His early work in research helped elevate the College’s national
reputation, particularly through his innovative studies in foodservice systems
designed for offshore drilling platforms and other remote environments. His
collaborations extended even further, including work with NASA, reflecting both
the breadth of his expertise and his forward-thinking approach to the field.

Throughout his career, Dr. Rappole served in a wide range of roles, including
interim dean, associate dean, and professor. Regardless of title, he was known
first and foremost as an educator and mentor. His classroom presence was
unforgettable. Students recall his food safety and sanitation lectures as both
demanding and deeply impactful, grounded in high standards and a genuine
desire to prepare them for successful careers. Beyond the classroom, he was
a constant source of guidance, encouragement, and honest advice. His ability
to connect with students, to challenge them, and to support them in equal
measure left a lasting impression on thousands who passed through Hilton
College.

In the College’s early years, Dr. Rappole worked closely with Eric Hilton,
forming a relationship rooted in shared values and a commitment to
excellence in hospitality. That partnership would later inspire one of his
most meaningful contributions. In 1999, Dr. Rappole founded the Eric Hilton
Distinguished Chair Alumni Lecture Series, which led to the creation of the
Eric Hilton Distinguished Alumni Club, known today as Eric’s Club. Through
this initiative, he strengthened the connection between alumni and the
College, creating a platform for accomplished graduates to return, share their
experiences, and inspire future generations. Today, Eric’s Club stands as a
testament to his belief in the power of community, mentorship, and lifelong
engagement.

Over the course of his 33-year career, Dr. Rappole’s influence reached far
beyond curriculum and programming. He helped cultivate a culture rooted in
generosity, curiosity, and genuine care for others. Known to many simply as
“Clint,” he was a gifted storyteller and a one-of-a-kind conversationalist, able
to engage anyone with his warmth, humor, and insight. He had a remarkable
ability to make people feel seen and valued, whether they were students,
colleagues, or alumni returning years after graduation.

Dr. Rappole’s contributions to Hilton College are lasting and far-reaching.
His work helped shape not only the institution but also the lives and careers
of countless individuals who carry his lessons forward. The traditions he
established continue to bring people together, the programs he developed
continue to open doors, and the community he fostered continues to grow.

Dr. Clinton L. Rappole will be remembered for his leadership, his mentorship,
and his extraordinary dedication to Hilton College. His legacy lives on in the
generations of students, alumni, faculty, and friends who were fortunate to
know him and to be influenced by his work.
