
Moody Towers Dining Commons transformed into a vibrant Mardi Gras celebration during UH Dining Services’ Delight‑Ful event, welcoming students, faculty, and staff with Cajun‑inspired dishes and a festive community atmosphere. The menu featured fried shrimp po’boys, red beans and rice, shrimp and grits, and classic gumbo.

“It’s such a comfort‑food menu,” said Alexcis Mendoza, district marketing manager for UH System Dining. She noted the dishes’ strong local appeal — especially for those with Louisiana roots — and how the menu helped create a celebratory mood as the campus heads into spring in a “Delight‑Ful” fashion.

In addition to the featured menu items, attendees enjoyed a pop‑up Learning Kitchen that demonstrated how to prepare a classic muffuletta sandwich. A mini–Makers Market also showcased local vendors and UH programs, further enhancing the sense of community.
“It’s so important to us that we give back to our local community and provide our students with even more diversity and flexibility in using their Cougar Dining Dollars,” Mendoza said. “UH Dining Services is truly a wholesome, beyond‑the‑plate program.”
The event marked the kickoff of the department’s annual Joy‑Ful series, which continues
in April with Color‑Ful, bringing more flavor, fun, and positive energy to campus.
