Opened in early June 2025, Via Via is a dynamic and diverse culinary hub located in one of the most prominent areas of The Venetian Resort in Las Vegas. Strategically positioned between the grand entrance, where guests check in, and the elevators leading to their suites, and adjacent to the casino floor, Via Via is impossible to miss. It is home to seven distinct food concepts, each sourced from different regions across the United States, offering guests a curated selection of signature dishes that reflect the unique identity of each venue.
Bryan Fyler, Vice President of Food and Beverage, has taken great care to highlight the signature items from five of the seven concepts, ensuring that guests experience the very best of what Via Via has to offer.
Turkey and the Wolf: Fried Bologna Sandwich
A standout offering from Turkey and the Wolf is the Fried Bologna Sandwich, a nostalgic yet elevated take on a classic American favorite. Chef Mason Hereford, a James Beard Award nominee, brings this dish to life with a combination of hard-seared bologna, melted cheese, shredded lettuce, Duke’s mayonnaise from New Orleans, and a secret hot mustard. The sandwich is served on thick, perfectly grilled toast and includes potato chips inside for added crunch. Its generous size and bold flavors make it a must-try, evoking childhood memories while delivering a gourmet experience.
Ivan Ramen: Spicy Miso Ramen and Wagyu Pastrami Buns
Chef Ivan Orkin, drawing inspiration from his Jewish heritage and culinary expertise, presents some very interesting items on his menu. Fyler shares two signature items: the Spicy Miso Ramen and the Waygu Pastrami Bunds.
The Spicy Miso Ramen features a rich broth made from miso, dashi, and chicken, complemented by ground pork, cilantro, bean sprouts, pickled garlic, and a soft-boiled egg. The dish offers a balanced heat from a blend of chilies, making it both comforting and invigorating.
Equally impressive are the Wagyu Pastrami Buns, a creative reinterpretation of the traditional New York deli pastrami sandwich. Served in soft buns reminiscent of those used in Peking Duck dishes, the slight sweetness of the bread pairs beautifully with the savory pastrami, creating a memorable appetizer that guests love.
Scarr’s Pizza: Vodka Pesto Sicilian Pie and the Hotboi
Scarr Pimentel’s Scarr’s Pizza brings East Coast flair to Las Vegas with its Vodka Pesto Sicilian Pie—a favorite of the chef himself. This thick, flavorful slice is a hit among guests, while the Hotboi offers a spicier alternative with thin crust, all-beef pepperoni, jalapeños, and a drizzle of hot honey. The unexpected combination of sweet and spicy elements elevates the pizza experience. For vegan guests, Scarr’s also offers a delicious slice topped with olive oil, oregano, vegan cheese, and fresh basil, ensuring inclusivity without compromising flavor.
B.S. Taqueria: Birria Nachos
Chef Ray Garcia’s B.S. Taqueria delivers bold Mexican flavors with its signature Birria Nachos. Traditionally made with braised goat meat, the birria here is prepared with beef, layered with cheese sauce, pico de gallo, and avocado salsa. The inclusion of tomatillos adds a refreshing, slightly fruity note that enhances the dish’s complexity. Designed for sharing, these nachos are both satisfying and vibrant, perfect for groups seeking a communal dining experience.
Howlin’ Rays: Hot Chicken and Banana Pudding
Howlin’ Rays offers a fiery journey through its range of hot chicken tenders, from the mild “Country” level to the extreme “Howlin’,” which is so intense that servers recommend wearing gloves. Yes, gloves are provided! The heat progression is enhanced by the Tennessee Tang and the use of ghost chili peppers, while the Comeback Sauce provides a milder, flavorful dip for balance. Despite the heat, the one item consistently wins guests over is the Banana Pudding. Creamy and comforting, it serves as the perfect counterpoint to the spicy chicken and is widely regarded as a must-have dessert.

At the heart of Via Via is All’Antico Vinaio, an Italian sandwich shop originally founded in Florence in 1991. Known for its authentic flavors and artisanal ingredients, it serves as a central anchor to the venue. Tucked away at the back is Close Company, a stylish bar that opens at 4 p.m., offering guests a refined space to unwind with expertly crafted cocktails.
